The magic of a super long holiday break is over and I’m mostly ok with it. Come Monday, I’ll be sitting at my desk at 7am instead of in the middle of a dream sequence about a ramen/pho soup combo (I have weird dreams). For me, January is more exciting than dreadful- there’s so much to look forward to! What will I do this year? Where will I go? Will this be the year that I learn to enjoy making salads? (Probably not.)
This IS going to be the year where I keep yummy and healthy snacks on hand, however. My closest coworker just moved several states away and now there’s no one to make clandestine trips to the nearest market for chocolate covered gummy bears. (Sigh.) (Also… probably a good thing, I guess.) In partnership with Blue Diamond and their treasure trove of tasty almond varieties, here are some of my favorite snack combos. Will you share yours with me?
Honey Roasted Almonds and dried fruit. This is some tasty mango, but cranberries or banana chips are also great options!
The next time we talk about snacks and I tell you how I have come up with ten different kinds of cheese that go perfectly with Lightly Salted Almonds you won’t be surprised. This is a caramelized onion cheddar, but Gruyere, cream cheese and even fresh mozzarella sound heavenly.
Spanish olives pictured below with some more Lightly Salted Almonds, also consider a handful of Castelvetrano olives or even black olives.
I have perfected this snack at home over the last week of break: honey roasted almonds, apple slices. There’s something about the combo of the crunchy nuts and the tart apple snap that’s super satisfying and just right.
