We’re having some incredible weather in San Francisco this week and although I know there were some tough storms around the country, hopefully they were brief and the snow is back to melting! To celebrate the return of warmer temps, I created this Blueberry-Pomegranate Punch cocktail after happening upon some pomegranate flavored vodka at my local market.
I’m used to seeing flavored vodkas around now (I have about four assorted bottles sitting in my freezer), but the pomegranate version caught my eye because I LOVE the tart earthy flavor of the fruit. Considering its (shall we say) INCONVENIENT prep process, I was excited about incorporating an easier fruit to create a simple, fresh drink. Blueberries- and you should know that I used frozen berries- are a cinch to find and blend wonderfully.
You will only need a tablespoon or two of the berries themselves per drink. Since I was using frozen, I set about a handful out on a baking tray to thaw.
- 1 1/2 ounces (3 tablespoons) pomegranate flavored vodka
- 3/4 cup blueberry juice
- 1-2 tablespoons fresh or frozen blueberries
- ice
- Pour berries into the bottom of your serving glass and muddle with a muddler or the back of a tablespoon.
- Add vodka and juice, stir gently.
- Top with ice and serve well-chilled.
Yum, muddled blueberries! Look at those tiny seeds!
