I’m a sucker for champagne and champagne cocktails. My husband will drink it with me, but it’s not his favorite beverage. And while I fully intend to partake in lots of bubbly this Valentine’s Day, I wanted to come up with a cocktail that both of us would like to drink. A beer cocktail was my first thought.
This cocktail has the bubbles that I love, but they come from beer instead of sparkling wine. I used a dark, chocolate-y beer and added some fruity raspberry liqueur. Top with a splash of cream to make it extra-decadent, and this drink is a fantastic treat.
The beer is definitely the strongest flavor in the cocktail, so make sure you pick one that you like and would drink on its own. I used a Japanese chocolate malt beer from Kamakura called “My Funny Valentine,” which isn’t amazing. If I were in the States I would probably use Rogue Ale’s Chocolate Stout.

- 1 can or bottle of chocolate-y beer, such as a chocolate stout or chocolate malt beer (I used a Japanese chocolate malt beer from Kamakura called "My Funny Valentine," but if I were in The States I would probably use Rogue Ale's Chocolate Stout)
- Raspberry liqueur, such as Chambord
- Heavy whipping cream (or half and half would work, too)
- optional garnish: chocolate shavings
- Divide the beer into 2 glasses. Add a generous splash of raspberry liqueur to each glass. Top with a touch of heavy cream. Gently stir with a spoon and top with chocolate shavings.
- Strawberry liqueur would probably be fantastic instead of raspberry, if you have that on hand.
