As I mentioned before, it’s getting really hot in Tokyo right now. I really wanted to go on a picnic before it got too warm, but it looks like I’ve missed my chance! So for my June party post, I planned the picnic I would have had if I’d been more on top of things. Hopefully you have a few days of bearable weather left wherever you live, and you can put together a fun picnic. The menu requires minimal cooking, everything can be made ahead of time, and it all transports really well. Just make sure your knives are sharp, because there is some chopping involved!
1. To eat for the main course: Pitas stuffed with Curry Chicken Salad. Line the pita with a piece of lettuce so the chicken salad doesn’t make the pita soggy intransit.
2. To eat as a side dish: Carla’s Greek Salad. Cucumber salads are so refreshing on warm days!
3. To eat for dessert: Fruit salad. With lots of berries.
